Thompson Bros Organic Highland Gin

Thompson Bros Organic Highland Gin is a blend of 90% organic grain spirit and 10% organic single malt new-make spirit. This exquisite botanical blend is created by slow-distilling organic grain gin, then incorporating Dornoch single malt new-make spirit alongside individually distilled raspberries, fresh lemon peel, pine needles, and elderflowers. The spirit is then slowly distilled to an ABV of 45.7%; the grain spirit provides an excellent base for the botanicals, while the single malt spirit contributes delightful fermentation notes, fruitiness, and a creamy, smooth mouthfeel.

Botanicals: Juniper berries, angelica root, tonka beans, fennel, orange peel, lime peel, lemon peel, coriander seeds, meadowsweet, elderflower, black pepper, freeze-dried raspberries, pine needles.

Bottle Design: The Dornoch Distillery building was formerly a 19th-century fire station; consequently, the bottle design is modeled after the 19th-century fire grenades used in Glasgow, Scotland.

Tasting Notes: Saline/mineral notes, pine resin and juniper, raspberry sweetness, lemon peel, gentle malt, and a rich, oily fruit finish.

Serving Suggestions: Ginger ale, Mediterranean tonic water, classic tonic water, ginger beer, or Appletiser sparkling apple juice. Garnish pairings: Raspberry, lemon, lime, rosemary, orange, matcha, thyme, fresh ginger, black pepper.
