Grapes are harvested by plot for flavor and skin ripeness. Each clone is fermented separately in a mix of traditional oak barrels and stainless steel tanks, followed by cold soaking to enhance pigment extraction. Wines are vinified in a style that promotes fruit complexity, texture and balance. After aging in French oak and blending, the wines are bottled unfiltered
Tasting notes A fruity, clean and complex bouquet with aromas of dark cherry and fruitcake. Roses and sweet baking spices. Complex and beautifully fragrant with aromas of dark cherry, raw meat, tar, and mixed spices, the wine is juicy and silky in the mouth, with an elegant texture and fine tannins. Pairing It goes perfectly with wild game such as salmon and venison. Cassoulet, duck meat with olives, charcoal-grilled steak, mushroom risotto, etc. 14.5% ABV Additional Information
