Paul, Everleaf’s founder, is a conservation biologist and a bar owner. Back in 2019, while serving some of the world’s best spirits, he knew exactly what made them great. But when someone asked for a great non-alcoholic option, finding the right answer wasn't so simple. That got him thinking—could he create a non-alcoholic drink with the same depth and complexity of the finest drinks? He turned to nature to find out.

Crafting Everleaf took over a year of experimentation. Paul dove deep into researching plants, sustainable sourcing, and testing methods like dehydrating, macerating, and extracting to create the perfect balance of complementary yet surprising flavours and perfect texture.

Everleaf's aperitifs can be mixed, stirred or shaken in all kinds of ways so you can enjoy great non-alcoholic drinks.

CRISP & REFRESHING

A crisp and refreshing aperitif that’s good for a Bergamot Spritz. Pour into a glass full of ice, top up with light tonic, and garnish abundantly.

The air hits you first - warm, salt-soaked, citrusy - as you walk through olive groves and pine trees to the waves. Made with a mix of plants that take you from a sunny shoreline stroll deep into the sea: salty air, clifftops lined with bergamot trees, and diving deep down to the seaweed.

Refreshing. Bright, clean sea air, with juniper and eucalyptus. And kelp - the sea’s calling card - salty, lush, fresh.
Zesty. A coastal walk through bergamot trees and pink rock roses for an aromatic and citrusy flavour.
Briny. In the sea now, with salt-and-sweet dulse, a rust-red seaweed that’s a little peppery.
