Shake hard with ice, strain into a chilled coupe, finish with a lemon twist.

Negroni

Equal parts, no shaker, two minutes. Bitter, sweet and strong.

  • Campari30 ml
  • Sweet vermouth (Dolin Rouge)30 ml

Stir with ice, pour over a large ice cube, add an orange peel.

Penicillin

Honey, lemon and ginger with Scotch, and a smoky single malt floated on top.

  • Blended Scotch60 ml
  • Fresh lemon juice22 ml
  • Honey-ginger syrup22 ml
  • Smoky Islay single malt, to float7 ml

Shake everything but the single malt, strain over ice, then float the single malt.

New Orleans' own: spicy rye, a little sugar, and a rinse of absinthe.

  • Peychaud's bitters3 dashes
  • Absinthe, to rinsea splash

Rinse a chilled glass with absinthe. Stir the rest with ice, strain in, express a lemon peel.
