Trappistes Rochefort

Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, almost like autumn leaves, very consistent texture with a slightly spicy aroma and an intense taste of caramel, fruit, and hints of raisins. It is only brewed about once per year, representing approximately 1% of total beer production, thus is quite difficult to obtain. Rochefort 8 (green cap, brown beer, 9.2% ABV). Yellowish-brown colour, with a more pronounced aroma, more fruits and a slight amount of Demi-Sec. This variety constitutes the largest proportion of production. Rochefort 10 (blue cap, dark beer, 11.3% ABV). Reddish-brown colour, with a very compact head and an aroma of figs, feels like honey in the mouth. The alcohol profile is a major component in the flavour of this rich ale. It is very similar to 6 and 8, but has much more of everything. But beware of the high alcohol content.

The "Trappistes Rochefort" is a brown ale. It is brewed and bottled within the walls of the Abbey of Saint-Remy in Rochefort. The modest dimensions of this brewery enable the Trappist monks and their collaborators to perfectly control production. Its artisan nature is particularly appreciated by more discerning palates. This beer contains only natural products; spring water, malt barley, hops, sugar. Yeast ensures the fermentation. Fermented again in the bottle, the Trappistes Rochefort releases its essence when it is served in an original glass at a temperature between 12 to 14°C.

罗斯福啤酒最初使用的配方是依照布鲁尔地区流传下来的旧方改制而成的，修道士们使用了严格的监管措施和当地的原料酿造出了深色、略甜、烈性的啤酒，与那些金黄色的啤酒比起来酒体明显浑厚，口味丰富，酒性也强烈很多，是修道士啤酒的的典型代表。
罗斯福啤酒还使用了独一无二的标志体系，它们使用数字来注明啤酒的级别，6、8、10三个数字代表的并不是酒精含量或麦汁浓度，而只是按照比利时的数字历法提出的三个不同等级而已，你可以理解为基本型、较强、烈性三个级别，这与其他一些使用数字作为标识的啤酒有着很大的区别。

罗斯福10号属于比利时风格的烈性上发酵黑啤酒，倒入杯中酒体呈深红褐色，有比例适中的焦黄色泡沫，这层泡沫极其细腻，将酒杯放置30分钟也不会散去，会有薄薄的一层覆盖在酒液上面，非常好。酒在杯中散发出浓郁的水果混合酒精的味道，入口则以水果味为先，之后体现出浓郁的酒味，酒体浑厚，沙口感并不强。当酒下咽之后，在喉咙处留下淡淡的啤酒花味道，口腔中充满水果混合酒精的香味，回味很久，这也是我喝到的为数不多的以纯粹啤酒花味结尾的比利时啤酒，让我以记忆犹新。
作为一款纯正的修道士啤酒，罗斯福10号绝对是不可多得的一款佳作，果香、酒香、啤酒花香融合的非常完美，各司其职，绝不对其它味道形成冲突，酸甜苦辣也都是非常适度的，并不过分体现某一种味道，而且带有一层非常细腻的泡沫久久留存在酒液表面，视觉、嗅觉、味觉都堪称完美了。

A vibrant mixture of dark ripe fruits: black currants, raspberries, and dark plums, interwoven with warming milk chocolate and delicate fragrant violets. The Rosemount Blends Shiraz Cabernet is a medium bodied wine, with bright flavours of spice, blackberry, cassis and mint. Soft, silky tannins carry a long, lingering finish. A lovely combination of ripe raspberry and cherry combine with plum and blueberry notes, while spice and savoury characters are also evident.
